It is not yet confirmed what versions will be released on DVD and Blu-ray but the equivalent US release has the Extended Cut only included with the Blu-ray Package. The US DVD is the Theatrical Version.

The Extended Cut features  more action, more explosions, more fights — and a higher body count than the PG-13 theatrical version.

Comparing BBFC Insight for each version, the extra violence is that there are some moments of strong violence, including a stabbing that are not included in the Theatrical Version. In fact the use of knives is notably absent from the description of the Theatrical Version.

Also the Theatrical Version has one use of the word ‘fuck’ whilst the Extended Cut has infrequent use of strong language: ‘fuck’, and ‘motherfucker’.

In THE EXPENDABLES 3, Barney (Stallone), Christmas (Statham) and the rest of the team come face- to-face with Conrad Stonebanks (Gibson), who years ago co-founded The Expendables with Barney.
